Matcha Coconut Protein Pudding

Ingredients
- 300g Silken tofu, drained
- 160ml Coconut cream
- 40g Performance Vanilla
- 1 tbsp Matcha
- 2 tbsp Coconut oil
- 2 tbsp Maple syrup
- ½ tsp Sea salt
- 1 tsp Vanilla extract
- Coconut yogurt
- Coconut flakes/shredded
- Raspberries
- Shaved white chocolate (optional)
Instructions
- In a high-speed blender blitz all the Pudding ingredients together.
- Pour into 4 little pots, chill for a couple of hours or overnight to set.
- When ready to serve, top with coconut yogurt, fresh raspberries, coconut flakes and a little white chocolate for added indulgence.
