Carrot Cake Overnight Oats

These Carrot Cake Overnight Oats deliver all the flavours of cozy cake in a wholesome breakfast. Fibre-rich oats, vibrant carrot, and juicy sultanas combine with psyllium husk, which supports digestion and creates a creamy, pudding-like texture. Perfect for batch making and enjoying as a quick breakfast or energising snack.
Ingredients
- 100g Oats
- 40g Performance Vanilla/Superblend Vanilla/Pureblend*
- 1 tbsp Psyllium husk
- 1 tsp Baking spice blend
- 500ml Plant-based milk
- 1 tsp Vanilla essence
- 1 Large carrot, peeled and grated (100g)
- 2 tbsp Sultanas
- Walnuts
- Thick dairy-free yogurt
Instructions
- In a container, mix the dry ingredients. In a separate bowl, combine the wet ingredients, then mix well. Add the grated carrots and the sultanas, and stir everything together.
- Close the container and place it in the fridge for at least four hours, or until you reach a creamy consistency. Serve with your favourite toppings and enjoy.
