@Nourishing.amy‘s mouth-watering vegan doughnuts are the ultimate sweet treat. The fluffy banana bread base is infused with our Tiramisu Performance Protein blend which not only gives it a hint of coffee, chocolate and vanilla flavour, but also makes these a healthy, high-protein bake.
Ingredients
- 3 large ripe bananas
- 2 tbsp chia seeds
- 1/4 cup coconut milk
- 2 tbsp olive oil
- 2 tbsp fruit syrup
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 1/4 cup plain flour
- 1/4 cup Tiramisu Performance Protein
- 1/2 cup chocolate chips
- 1/2 cup (125g) chocolate coconut yoghurt
Instructions
Preheat the oven to 190°C and grease a doughnut tray with oil. Mash the bananas and add in the chia seeds, coconut milk, olive oil and syrup and stir until smooth. Leave for 5 minutes before adding the coconut sugar, baking powder, bicarbonate of soda, flour and protein powder and mix until combined, folding in the chocolate chips as you go. Divide the batter between the doughnut holes, filling them 3/4 full, then bake for 12-15 minutes until golden brown and firm to touch. Allow to cool before removing from the moulds. Prepare the frosting by whipping the coconut yoghurt until thicker, then spread over each doughnut. To finish, sprinkle with coconut and chopped nuts or chocolate.
