Chocolate Peanut Butter Cups
A healthy and homemade alternative for the Reeses cups. With the advantage of being rich in protein and free from nasties. Make it on a Sunday and have a delicious treat for a whole week.
Ingredients
- 200g Smooth peanut butter
- ½ cup Superblend Chocolate Peanut/Performance Chocolate Peanut
- ¼ cup Maple syrup
- ¼ cup Melted coconut oil
- 1 tsp Vanilla extract
- Pinch sea salt
- 60g 70% dark chocolate
- 1 tbsp Smooth peanut butter
- 1 tsp Coconut oil
- Peanuts
- Sea salt
Instructions
- Combine all the filling ingredients and divide between moulds or muffin cases of choice. The mini ones are best for treat size.
- Refrigerate for a good 30min or longer to set.
- Meanwhile, melt the chocolate topping and spread evenly between all cups, in a thin layer. Top with peanuts and sea salt and refrigerate until set.
- One set remove from moulds and place in an airtight container. Ideally keep in the fridge. They will last a good week, if you don’t eat them all before then!
