Wholesome, and packed with goodness, this Nordic Seed Loaf is a nutrient-dense powerhouse that goes beyond your average bread. Made with a nourishing blend of rolled oats, protein-rich seeds, and heart-healthy nuts, every slice delivers a satisfying dose of fibre, healthy fats, and plant-based protein. Psyllium husks and chia seeds support digestion and help bind the loaf naturally—no flour or yeast required—while ingredients like flax, hemp, and sprouted buckwheat add extra omega-3s and minerals. Whether enjoyed toasted with avocado or alongside a hearty soup, this loaf is a deliciously functional way to fuel your body and support long-lasting energy.

Ingredients

  • 200g Rolled oats
  • 30g Psyllium husks
  • 60g Pureblend
  • 130g Sunflower seeds
  • 50g Pumpkin seeds
  • 50g Almonds (whole)
  • 50g Hazelnuts (whole)
  • 50g Walnuts
  • 60g Ground flax seeds
  • 2 tbsp Sesame seeds
  • 2 tbsp Hemp seeds (optional)
  • 2 tbsp Sprouted buckwheat grouts (optional)
  • 2 tbsp Whole flaxseed
  • 2 1/2 tbsp Chia seeds
  • 3 tsp Sea salt
  • 1 tbsp Extra virgin olive oil
  • 600ml warm water

  • Vegan cream cheese and fruit compote
  • Mashed avocado
  • Vegan cream cheese and radishes/pink onions and herbs
  • Nut butter and sliced pear, sprinkle cinnamon
  • Can be toasted first
  • Sliced and frozen

Instructions

  1. Combine all the dry ingredients in a large bowl and add all the wet ingredients. Mix thoroughly and cover. The dough needs to rest for a minimum of 2 hours ideally 4 or overnight to allow everything to soak up and gel together. 
  2. Once rested, heat the oven to 180°C.
  3. Grease and line a loaf tin. Pour the dough into the tin and push down a little. 
  4. Bake in the preheated oven for approx. 1 hour.
  5. Remove from the oven and allow to cool completely before slicing and serving.
  6.  It can be toasted and or sliced and frozen. That way you can toast from frozen whenever you fancy a slice.
