Lime Matcha Protein Bite

These Lime Matcha Protein Bites are zesty, energising, and packed with plant-based protein—perfect for powering through your day with a refreshing twist. Ingredients
- 150g Cashews
- 50g Desiccated coconut
- 2 tsp (6g) Matcha powder
- ¼ tsp (1g) Salt
- 50g Performance Vanilla
- 200g Dried apricots
- 3 tbsp Lemon juice
- Zest of 1 lemon
- 1 tbsp Coconut oil
- 1 tsp Vanilla extract
- 2 tbsp Water
Instructions
- Soak the dried apricots in hot water for 20 minutes
- Blend the dry ingredients – In a food processor, blend the cashews, desiccated coconut, protein powder, salt, matcha powder until finely ground.
- Add the wet ingredients – Add lemon zest and juice, coconut oil, water, vanilla extract and pulse to combine.
- Check the texture – If the mixture is too dry, add another tablespoon of water (one at a time) and blend again until you can press it into a ball.
- Cut into squares – flatten the mixture into a small 6/7 inch square container lined with baking paper. Place in the fridge for 30 minutes to harden and then cut into squares.
- Storage: Store in an airtight container in the fridge for up to a week or freeze for longer freshness.
