Baked Pumpkin Donuts
Baked rather than fried, these autumnal donuts get their colour from pumpkin, which is rich in beta-carotene, along with fibre and potassium for fluid balance. Soy milk and Performance Vanilla together add complete plant protein. Warming spices such as cinnamon and ginger round out the flavour, while pecans add healthy unsaturated fats and a satisfying crunch. With a lower-sugar sweetener in the batter, they’re a seasonal treat that still fits around an active week.

- 1 tbsp Pumpkin spice mix, made up of 1½ tsp ground cinnamon, ¾ tsp ground ginger, ½ tsp ground nutmeg and ¼ tsp ground cloves
WET INGREDIENTS:
- 1¼ cups Soy milk
- ¼ cup Neutral oil
- 1 tbsp Apple cider vinegar or lemon juice
- 1 tsp Vanilla bean paste or extract
- ½ cup Pumpkin puree
CREAM CHEESE MAPLE FROSTING:
- ¾ cup Vegan cream cheese
- 2 tbsp Performance Vanilla
- ¼ cup Maple syrup
- 1 tsp Vanilla extract
TOPPING:

Instructions
- Preheat your oven to 180°C / fan 160°C / Gas 4, and grease one 12-ring or two 6-ring donut moulds.
- Combine all the dry ingredients in a large bowl, then combine all the wet ingredients in a separate bowl. Stir the wet ingredients into the dry, being careful not to overmix.
- Divide the mixture evenly between the donut moulds and bake for 15 minutes. Check by inserting a skewer. If it comes out clean, they're done. If not, return them to the oven for five more minutes.
- Allow the donuts to cool in their moulds for 5–10 minutes, then turn them out onto a cooling rack to cool completely. Meanwhile, beat the frosting ingredients together until silky smooth.
- Dip each cooled donut into the frosting, give it a little twist to remove, then place back on the cooling rack. To finish, sprinkle with chopped pecan nuts.
