Millionaire Shortbread Cups
These Millionaire Shortbread Cups are the ultimate healthy treat: they’re made with nourishing ingredients and are fun and easy to make!
Ingredients
- 30g Performance Chocolate Hazelnut
- 20g Cocoa powder
- 60g Oat flour
- ¼ tsp Baking soda
- ¼ tsp Salt
- 30g Coconut oil, melted
- 40g Maple syrup
- 100g Pitted dates
- 2 tbsp Plant milk of choice
- 80g Vegan chocolate of choice
- 2 tbsp Plant milk of choice
- 40g Vegan white chocolate
Instructions
- Preheat oven to 180c / 160c fan.
- Place the pitted dates in a bowl and cover with boiling water. Set this aside to soak for at least 30 minutes.
- Add the dry ingredients for the shortbread to a bowl and whisk to combine then add in the wet ingredients. Fold with a spatula until combined then divide into 6 pieces.
- Place into 6 muffin holes of a silicone muffin tray or paper cupcake cases, press them into the bottom and use a spoon to create a well in the centre. Bake for 8 minutes.
- Drain the water from the dates then add milk and mash with a fork as much as you can OR blend until smooth. Fill each cookie cup.
- For the chocolate ganache: bring a small saucepan of water to a simmer then place a glass bowl on top. Add the chocolate and milk to the bowl and gently melt this.
- Pour the chocolate onto the caramel layer and pop it in the fridge for at least an hour until set.
- Melt your white chocolate and transfer it into a piping bag with a small round nozzle. Pipe crosses onto your millionaire shortcake and refrigerate for 5 minutes.
