Banoffee Pancakes
These Banoffee pancakes are unbelievably delicious, so much so we’re confident you’ll have these in your weekend breakfast rotation. By adding in our Banoffee Performance protein to the pancake mix, not only does it boost up the protein content but it transforms a standard pancake to a fluffy and pillowy pancake version of the much-beloved British dessert. Topped with a winning combination of caramelised bananas, yogurt, shaved dark chocolate and maple syrup, these are hard to resist.
Ingredients
- 45g GF Oat flour
- 45g GF Flour
- 20g Performance Banoffee
- 1 tsp Baking powder
- ½ tsp Cinnamon
- ⅛ tsp Sea salt
- ½ Ripe banana (50g)
- ½ tsp Vanilla extract
- 175ml Almond milk
- Coconut oil for greasing the frying pan
- Caramelised bananas
- Non-dairy yogurt
- Grated dark chocolate
- Maple syrup
Instructions
- Mix the dry ingredients together.
- In a separate bowl, mash banana, add vanilla extract and almond milk, whisk and pour into the dry ingredients bowl incorporating the mix until smooth.
- In a non-stick frying pan add some coconut oil, wait until it’s hot and fry the pancakes in batches.
- Stack the pancakes, add your favourite toppings and enjoy!
