Chocolate Protein Bark
This chocolate protein bark is the perfect balance of indulgent and functional. Rich dark chocolate meets crunchy nuts, chewy dried fruit and a boost of Performance protein, finished with a delicate drizzle of white chocolate and a pinch of pink sea salt. It’s easy to make, looks impressive, and is ideal for a post-workout treat or an afternoon pick-me-up.
Ingredients
- 300g Dark chocolate
- 40g Performance Chocolate Peanut
- ½ cup Mixed dried fruits ( we used dry figs, crystallised ginger and cranberries)
- ½ cup Mixed nuts and seeds (we used pistachios, pumpkin, sunflower and flaxseed)
- 50g White chocolate for drizzling
- Pinch of sea salt
Instructions
- Gently melt the dark chocolate using a heatproof bowl set over a pan of simmering water.
- Remove from the heat and stir in the performance protein until fully combined.
- Fold through the mixed dried fruits and mixed nuts and seeds, ensuring they are evenly distributed.
- Pour the mixture onto a lined baking tray (30x20cm) or flat dish and spread it out into an even layer.
- Melt the white chocolate and drizzle it over the top using a spoon or piping bag. Sprinkle lightly with pink sea salt.
- Place in the fridge for 30 to 45 minutes, or until fully set. Once firm, break or cut into pieces and store in an airtight container in the fridge.
