This chocolate protein bark is the perfect balance of indulgent and functional. Rich dark chocolate meets crunchy nuts, chewy dried fruit and a boost of Performance protein, finished with a delicate drizzle of white chocolate and a pinch of pink sea salt. It’s easy to make, looks impressive, and is ideal for a post-workout treat or an afternoon pick-me-up.

Ingredients

  • 300g Dark chocolate
  • 40g Performance Chocolate Peanut
  • ½ cup Mixed dried fruits ( we used dry figs, crystallised ginger and cranberries)
  • ½ cup Mixed nuts and seeds (we used pistachios, pumpkin, sunflower and flaxseed)
  • 50g White chocolate for drizzling
  • Pinch of sea salt

Instructions

  1. Gently melt the dark chocolate using a heatproof bowl set over a pan of simmering water.
  2. Remove from the heat and stir in the performance protein until fully combined.
  3. Fold through the mixed dried fruits and mixed nuts and seeds, ensuring they are evenly distributed.
  4. Pour the mixture onto a lined baking tray (30x20cm) or flat dish and spread it out into an even layer.
  5. Melt the white chocolate and drizzle it over the top using a spoon or piping bag. Sprinkle lightly with pink sea salt.
  6. Place in the fridge for 30 to 45 minutes, or until fully set. Once firm, break or cut into pieces and store in an airtight container in the fridge.
