Ultimate Salted Chocolate Peanut Cookies
Addiction warning! This soft chewy cookie with a crisp shell is definitely one of our top five recipes on this website. Do we need to say more? Go and try for yourself. By the way, it’s vegan, gluten free, seed oil free, refined sugar free, and protein packed.
Ingredients
- 125ml Smooth unsweetened peanut butter
- 125ml Coconut oil
- 170g Coconut sugar/alternative pure via/soft brown
- 2 tsp Vanilla extract
- 60ml Oat/cashew milk, or your preferred alternative
- 120g Oat flour
- 2 heaped tbsp Performance Chocolate Peanut
- 3 heaped tbsp Cocoa powder/raw cacao powder
- 2 tbsp Cornflour
- ½ tsp Baking powder
- ½ tsp Baking soda
- 1 tsp Sea salt, plus extra to finish
- 150g Chocolate chips or a bar of dark chocolate chopped into pieces
- 60g Peanuts - I used roasted & salted
Instructions
- Preheat the oven to 160c fan and line 2 trays with parchment paper.
- In a large bowl combine all the dry ingredients, including peanuts and chocolate chips.
- In a small pan add all the wet ingredients and heat very gently until the oil is just melted and everything is combined smoothly.
- Pour the wet mix into the dry mix and combine fully, but don’t over mix.
- Roll into golf ball sized balls, place them on the lined baking tray and push down gently with your palm. Approx. 6-8 per tray, do not over crowd.
- Bake for 10-12mins. Allow it to cool if you can bear it.
- They will firm up once cooled.
