Blackberry Fig Crumble
What is better than a crumble? A healthy crumble! This recipe is gluten, refined sugar and dairy free, but full of flavour. Replacing butter with a nut butter gives a delicious nutty taste and using oats and seeds instead of white flour brings you added benefits such as fibre and healthy fats. Great for a comforting breakfast or a delicious dessert.
Ingredients
- 60g Superblend/Performance Vanilla or Pureblend (if using Pureblend add 2 tsp Vanilla extract to mix)
- 120g Gluten-free Rolled oats
- 40g Flaked almonds
- 40g Mixed seeds
- 100g Peanut butter
- 30g Maple syrup
- 40g Good quality extra virgin olive oil or coconut oil
- 400g Fresh figs
- 100g Fresh blackberries
- 1 tsp Vanilla extract
- 1 tsp Cinnamon powder
- 60ml Maple syrup
Instructions
- Preheat the oven to 180°C fan.
- Combine the fruits, maple syrup, vanilla and cinnamon and place in a baking dish.
- In a large bowl add all the crumble topping ingredients and rub together with your hands to form a lumpy crumb.
- Top the fruits with the crumble and place in the pre heated oven for approx. 30 mins or until the topping is lightly golden and the fruit is bubbling.
- Serve with vanilla ice cream, cream, custard or yogurt.
