If you love the autumn flavours of apple pie but want a healthy, no-fuss way to enjoy them, these Apple Pie Overnight Oats are the perfect choice. They’re quick to prepare, great for batch making, and store in the fridge so you can have a wholesome breakfast or snack ready to grab-and-go.

Ingredients

  • 100g Oats
  • 40g Performance Vanilla/Superblend Vanilla/Pureblend*
  • 1 tsp Ceylon cinnamon
  • 1 tbsp Psyllium husk
  • 500ml Plant-based milk
  • 1 tsp Vanilla essence
  • 1 Large fresh apple, grated (100g)
  • 50g Dried soft apple
*Sweeten to taste OPTIONAL TOPPINGS:
  • Apples
  • Almond butter
  • Coconut yogurt

Instructions

  1. In a container, mix the dry ingredients. In a separate bowl, combine the wet ingredients, then mix well. Add the grated apple and the soft dried apple cut into chunks, and stir everything together.
  2. Close the container and place it in the fridge for at least four hours, or until you reach a creamy consistency. Serve with your favourite toppings such as seeds, coconut yoghurt, and nut butter.
