Carrot Cake Energy Balls
These raw Carrot Cake Energy Balls are packed with protein, naturally sweetened and flavoured with warming spices like ginger and cinnamon.
Ingredients
- 100g Cashew nuts
- 100g Walnuts
- 100g Pitted Medjool dates
- ½ cup Finely grated carrots
- ¼ cup Superblend Vanilla Or Performance Vanilla
- 2 tbsp Coconut flour
- 1 tsp Fresh ginger
- 1 tsp Coconut oil
- ½ tsp Ground cinnamon
- 1 tsp Orange extract
- ⅛ tsp Nutmeg
- ⅛ tsp Sea salt
- 50g Almond cheesecake
- 30g Thick coconut yogurt
- 1 tsp Vanilla extract
Instructions
- In a powerful food processor, blend all the ingredients together until broken down into smaller pieces and it reaches a sticky, crumbly consistency.
- Place in the freezer for approximately 10 minutes, then shape into small balls and enjoy!
- Optional frosting: Whisk all the ingredients together until smooth. Dip the energy balls into the frosting and place it in the fridge. Consume within five days.
