An easy, creamy, citrusy delight! This mousse can be enjoyed any time of the day. Works well with granola for breakfast or as a light dessert after dinner.
- 80g Ripe avocado
- 100g Coconut greek yogurt
- 2 tbsp Superblend key lime
- 1 tsp Key lime juice
- ½ tsp Vanilla extract
- ½ Psyllium husk
- ¼ tbsp Key lime zest for topping
- Blend all ingredients, except the lime zest.
- Pour into glass jar, top it with lime zest, and place in the fridge for 2 hours before serving.
- If you're not having it right away, it keeps in the fridge for up to two days.
