This Strawberry & Courgette Smoothie is one of seven recipes in our low-carb series, which swap out carbohydrate-dense ingredients such as dates or bananas for ones containing healthy fats, greens and/or low-sugar berries.

Courgette – or zucchini for those of you in the US – might not sound like the most appealing smoothie addition on paper, but give the uber-accessible vegetable a chance and you’ll reap the benefits of high fibre and abundant vitamin B6, riboflavin, folate, vitamins C & K, and minerals potassium and manganese.

Ingredients

  • 240ml Cashew milk
  • 120g Frozen strawberries
  • 50g Chopped courgette (frozen/raw)
  • 20g Superblend Vanilla
  • 20g Chia seeds

Instructions

Blitz all the ingredients together in a blender for approximately 20 seconds. Serve chilled and drink immediately.
