Raspberry Coconut Protein Bites

Ingredients
- 1 cup Cashews (150g)
- ½ cup Desiccated coconut (50g)
- ¼ cup Dried raspberries (25g)
- ½ cup Performance/Superblend Vanilla (60g)
- 200g Medjool dates, pitted
- 1 tsp Vanilla extract (5ml)
- ¼ tsp Salt (1g)
- 2 tbsp Water (30ml)
Instructions
- Blend the dry ingredients – Add the cashews, desiccated coconut, dried raspberries, protein powder, and salt. Pulse to mix.
- Incorporate the wet ingredients – Add the pitted dates, vanilla extract, water then blend again until the mixture starts to come together.
- Check the texture – If the mixture is too dry, add another tablespoon of water (one at a time) and blend again until you can press it into a ball.
- Cut into squares – flatten the mixture into a small 6/7 inch square container lined with baking paper. Place in the fridge for 30 minutes to harden and then cut into squares.
- Storage: Keep them in an airtight container in the fridge for up to a week or freeze for longer storage!
